INGREDIENTS :
- 3 medium cucumbers, peeled and sliced ¼” thick
- 1 medium onion, sliced into rings
- 3 medium tomatoes, cut into wedges
- ½ cup vinegar
- ¼ cup sugar
- 1 cup water
- 2 tsp salt
- 1 tsp fresh coarse ground black pepper
- ¼ cup oil
INSTRUCTIONS:
- 
Prep Vegetables: 
 Peel/slice cucumbers → separate onion rings → cut tomato wedges.
 Combine in large mixing bowl.
- 
Make Marinade: 
 Add vinegar, sugar, water, salt, pepper, and oil to bowl. Stir well.
- 
Marinate: 
 Transfer to mason jar. Refrigerate 1-2 hours.
- 
Serve: 
 Drain excess liquid → enjoy chilled!
