Easy Crockpot Potato Soup

Ingredients : 

  • 1 bag (30 oz) shredded hash browns
  • 5 1/2 cups chicken broth
  • 1 can cream chicken soup
  • 1/2 cup chopped onion
  • 1/4 tsp ground pepper
  • 1 pkg. cream cheese, room temperature. (don’t use fat free, won’t melt)

Instrcutions : 

  1. In 6 qt crockpot, combine everything EXCEPT cream cheese.
  2. Cook on low, 6-8 hours.
  3. About an hour before serving, put cream cheese in a bowl, add a couple ladles of the hot soup and mix well, before adding back to the soup. No lumps!
  4. Serve with cheese, sour cream, bacon bits, green onions, or whatever.
  5. But it’s delicious all by itself.
