Crispy Chicken with Creamy Pasta

Ingredients :

  • – 8 oz pasta (penne or fettuccine recommended)
  • – 4 boneless, skinless chicken breasts
  • – 1 cup heavy cream
  • – 1 cup breadcrumbs
  • – 1 cup grated Parmesan cheese
  • – 2 eggs, beaten
  • – 3 cloves garlic, minced
  • – 2 tbsp butter
  • – 1 tsp garlic powder
  • – 1 tsp paprika
  • – Olive oil, for frying
  • – Salt and pepper, to taste
  • – Fresh parsley, chopped for garnish

Instructions : 

1. Season the chicken breasts generously with salt and pepper. Prepare two bowls: in one, beat the eggs; in the other, mix the breadcrumbs, garlic powder, paprika, and half the grated Parmesan cheese.

2. Dip each seasoned chicken breast into the egg mixture, ensuring it’s fully coated, then transfer it to the breadcrumb mixture. Press down lightly to ensure the crumbs stick.

3. Heat a generous amount of olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts. Cook for 5-6 minutes on each side, or until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set aside, keeping them warm.

4. Cook the pasta according to package instructions. Once al dente, drain the pasta and set it aside.

5. In the same skillet you used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring it to a gentle simmer for about 2-3 minutes.

6. Stir in the remaining grated Parmesan cheese and season the sauce with salt and pepper. Continue cooking until the sauce thickens slightly.

7. Add the drained pasta into the creamy sauce, tossing it well to ensure each piece is fully coated.

8. To serve, plate a generous portion of creamy pasta and top it with your crispy chicken. Finish with a sprinkle of chopped fresh parsley and additional grated Parmesan f
