Cottage Cheese Donuts

Ingredients:

2 1/2 cups self-rising flour
1 cup cottage cheese
1 cup milk (unsweetened almond milk works well)
1–2 tablespoons sugar (optional)

Cinnamon Sugar Topping

1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
Cooking spray or 2 tablespoons melted butter

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly spray a 12-count donut pan with cooking spray.
  2. In a large mixing bowl, combine the self-rising flour, cottage cheese, milk, and sugar (if using). Mix until a thick batter forms.
    • If the batter is too thick, add 1 to 2 tablespoons of milk.
    • If too thin, add 1 tablespoon of flour at a time until thick but scoopable.
  3. Spoon or pipe the batter evenly into the prepared donut pan.
  4. Bake for 15 to 17 minutes, or until the donuts bounce back when touched and are lightly golden around the edges.
  5. While the donuts bake, whisk together the sugar and cinnamon in a shallow bowl.
  6. Once baked, remove donuts from the oven and let them cool slightly. Spray all sides with cooking spray or brush with melted butter.
  7. Quickly dip each donut into the cinnamon sugar mixture, coating both sides evenly.

Notes

  • If not using cooking spray, brush each donut with about 2 tablespoons melted butter before coating in cinnamon sugar.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 6 months and thaw at room temperature before serving.
