Ingredients:
2 1/2 cups self-rising flour
1 cup cottage cheese
1 cup milk (unsweetened almond milk works well)
1–2 tablespoons sugar (optional)
Cinnamon Sugar Topping
1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
Cooking spray or 2 tablespoons melted butter
Instructions:
- Preheat the oven to 375°F (190°C). Lightly spray a 12-count donut pan with cooking spray.
- In a large mixing bowl, combine the self-rising flour, cottage cheese, milk, and sugar (if using). Mix until a thick batter forms.
- If the batter is too thick, add 1 to 2 tablespoons of milk.
- If too thin, add 1 tablespoon of flour at a time until thick but scoopable.
- Spoon or pipe the batter evenly into the prepared donut pan.
- Bake for 15 to 17 minutes, or until the donuts bounce back when touched and are lightly golden around the edges.
- While the donuts bake, whisk together the sugar and cinnamon in a shallow bowl.
- Once baked, remove donuts from the oven and let them cool slightly. Spray all sides with cooking spray or brush with melted butter.
- Quickly dip each donut into the cinnamon sugar mixture, coating both sides evenly.
Notes
- If not using cooking spray, brush each donut with about 2 tablespoons melted butter before coating in cinnamon sugar.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Freeze for up to 6 months and thaw at room temperature before serving.
