Hawaiian Banana Bread

 

Ingredients:

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
3 ripe bananas, mashed
1/2 cup crushed pineapple, well drained
1/2 cup shredded coconut

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and baking soda. Set aside.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in mashed bananas and drained crushed pineapple until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until incorporated. Do not overmix.
  7. Fold in shredded coconut.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serving Suggestion

Serve warm with a light spread of butter or toasted with a drizzle of honey for an extra tropical touch.
