Ingredients :
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cups grape tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil leaves, chopped
- Extra basil leaves for garnish
Directions :
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and sear until golden, about 3-4 minutes per side.
- Transfer the seared chicken to a greased baking dish.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved tomatoes, balsamic vinegar, oregano, and dried basil. Sauté for about 5 minutes until the tomatoes start to break down.
- Pour the tomato mixture over the chicken in the baking dish. Sprinkle with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Remove from the oven and top with fresh chopped basil and extra basil leaves for garnish. Enjoy!
