BLACKEYE PEAS SAUSAGE AND COLLARD GREENS

Ingredients :

  • 1 lb smoked sausage, sliced
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can black-eyed peas, rinsed and drained
  • 1 can diced tomatoes, undrained
  • 2 cups fresh or frozen collard greens, chopped
  • Salt and black pepper, to taste
  • Red pepper flakes, for a touch of heat (optional)

Instructions :

  1. Brown the Sausage: In a large pot, cook the smoked sausage over medium heat until browned, about 5-7 minutes. This step brings out the smoky flavor of the sausage, adding depth to your soup. Once browned, remove the sausage with a slotted spoon, leaving the drippings behind.
