Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or similar)
  • 1 tsp baking powder
  • Salt to taste
  • Pepper to taste
  • Optional: garlic powder, Italian seasoning, or fresh herbs

Instructions

  • Preheat oven to 190°C (375°F). Line baking sheet with parchment paper
  • Blend/s whisk cottage cheese and eggs until smooth
  • Fold in cheese, baking powder, salt, pepper, and optional seasonings
  • Portion mixture into mounds on baking sheet
  • Bake 20-25 minutes until golden and puffed
  • Let rest for firmness before serving

Notes

Use full-fat cottage cheese for best texture
Optional: Add fresh herbs like parsley or chives
Store leftovers in airtight container up to 2 days
