Ingredients

  • 6 cups seedless watermelon, cut into cubes
  • 1 1/2 cups fresh blueberries
  • 1 cup feta cheese, crumbled or cubed
  • 1/4 cup fresh mint, thinly sliced
  • 1/4 cup fresh basil, thinly sliced (optional)
  • 1/4 cup thinly sliced red onion (optional)
  • Pinch of flaky salt
  • Black pepper, to taste
  • 3 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp lime zest
  • Pinch of salt (for dressing)

Instructions

  • Make the dressing: Whisk together lime juice, honey, olive oil, lime zest, and a pinch of salt in a small bowl.
  • Prep the salad: In a large bowl, combine watermelon, blueberries, feta, mint, basil (if using), and red onion (if using).
  • Dress gently: Drizzle honey-lime dressing over the salad and toss gently to combine, being careful not to crush watermelon or break feta.
  • Finish: Sprinkle with flaky salt and black pepper.
  • Chill and serve: Serve immediately or refrigerate for 15-20 minutes before serving for enhanced flavor.

Notes

Basil and red onion are optional for a lighter flavor.
The salad is best served fresh but can be refrigerated briefly.
Optional garnish: Toasted walnuts or a drizzle of balsamic glaze for extra depth.
