Ingredients

  • 1 lb rotini pasta
  • 2 cups roasted corn (fresh or frozen)
  • 1½ cups chopped dill pickles
  • 1 cup shredded cheddar cheese
  • ½ cup diced red onion
  • ½ cup sliced green onions
  • 1-2 jalapeños, finely diced
  • ½ cup chopped cilantro
  • 1 tbsp pickle juice
  • 1 tbsp lime juice
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup ranch dressing
  • 2 tbsp pickle juice (additional for dressing)
  • 1 tbsp lime juice (additional for dressing)
  • 1 tbsp taco seasoning
  • 1 tbsp ranch seasoning
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp Tajín-style seasoning
  • 1-2 tsp hot sauce (adjust to taste)
  • Black pepper to taste
  • ½ cup crushed tortilla chips
  • ¼ cup grated parmesan or cotija cheese
  • 1 tsp Tajín
  • 1 tsp ranch seasoning
  • ½ tsp smoked paprika
  • 1-2 tsp halal bacon seasoning or smoked seasoning substitute
  • Extra pickles
  • Extra green onions

Instructions

  • Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente (8-10 minutes). Drain and rinse with cold water until cool.
  • In a large bowl, combine roasted corn, dill pickles, cheddar cheese, red onion, green onions, jalapeños, and cilantro.
  • In a separate bowl, whisk mayonnaise, sour cream, ranch dressing, 3 tbsp pickle juice, 2 tbsp lime juice, taco seasoning, ranch seasoning, smoked paprika, garlic powder, onion powder, chili powder, Tajín-style seasoning, and hot sauce. Adjust seasoning to taste.
  • Pour dressing over pasta mixture and toss to coat evenly. Season with black pepper.
  • Chill for at least 30 minutes before serving.
  • Sprinkle toppings (tortilla chips, parmesan/cotija, Tajín, ranch seasoning, smoked paprika, halal bacon seasoning, pickles, and green onions) just before serving.

Notes

Chill thoroughly for best flavor.
Toppings can be omitted or adjusted for dietary preferences.
Use halal-certified hot sauce if available.
Refrigerate leftovers within 2 hours of preparation.
