Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled cotija or feta cheese
  • 1/2 cup sweet corn, drained and patted dry
  • 2 tbsp sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp hot honey
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 tsp ranch seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 jalapeño, finely diced
  • 2 tbsp chopped cilantro
  • 1 1/2 cups crushed corn chips or Fritos
  • 2 tbsp ranch seasoning
  • 1 tsp Tajin or chili-lime seasoning
  • 1/2 tsp smoked paprika
  • 1/4 cup crumbled cotija cheese
  • 1 tbsp chopped cilantro
  • Hot honey drizzle
  • Lime zest
  • Extra crushed corn chips

Instructions

  • Combine cream cheese, cheddar, cotija/feta, sweet corn, sour cream, mayonnaise, hot honey, lime juice, lime zest, ranch seasoning, smoked paprika, chili powder, garlic powder, black pepper, jalapeño, and cilantro in a bowl. Mix until smooth.
  • Chill mixture for 45 minutes until firm enough to shape.
  • In a shallow bowl, combine crushed corn chips, ranch seasoning, Tajin, smoked paprika, and cotija cheese.
  • Gather chilled mixture into 12-15 small balls, rolling each through the corn chip coating.
  • Garnish individually with hot honey drizzle, lime zest, and extra corn chips for serving.
