Ingredients

  • 4 large ripe but firm peaches, sliced thickly
  • 1 cup apple cider vinegar
  • 1 cup white vinegar
  • 1 cup water
  • 1¼ cups granulated sugar
  • 1 vanilla bean, split and scraped
  • 1 cinnamon stick (plus 1 extra for jars)
  • 4 whole cloves
  • ½ teaspoon whole black peppercorns
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice
  • Optional: 1 small piece fresh ginger, 1 strip lemon peel, 1 small jalapeño, sliced, 1 star anise

Instructions

  • Rinse and slice peaches: Rinse peaches thoroughly and slice them thickly to retain texture.
  • Prepare jars: Place peach slices into clean glass jars without packing tightly.
  • Make the vanilla brine: Combine apple cider vinegar, white vinegar, water, sugar, lemon juice, salt, cinnamon stick, cloves, peppercorns, and vanilla seeds in a saucepan.
  • Add vanilla pod: Place the empty vanilla pod in the pot.
  • Heat and dissolve sugar: Boil mixture over medium heat, stirring until sugar dissolves.
  • Simmer: Reduce heat and simmer 5 minutes to blend flavors.
  • Pour over peaches: Carefully pour hot brine into jars to fully cover peaches.
  • Add spices to jars: Place a cinnamon stick and vanilla pod in each jar.

Notes

Chill for at least 24 hours before serving for best flavor.
Store in airtight containers in refrigerator for up to 2 weeks.
Optional flavors like star anise or jalapeño can be added for heat or aromatic depth.
