Ingredients

  • ½ cup coarse kosher salt (completely dry)
  • 2 tablespoons smoked paprika
  • 1 tablespoon sweet paprika
  • 1 tablespoon brown sugar
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon mustard powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon chipotle powder
  • ½ teaspoon dried thyme, crushed
  • ½ teaspoon ground coriander (optional)
  • ¼ teaspoon cinnamon (optional)

Instructions

  • Check your coarse kosher salt and ensure it is completely dry. If clumpy, spread on a tray to air-dry for 20-30 minutes.
  • Combine all ingredients in a bowl. Stir well until a consistent deep rusty red color is achieved.
  • Optional: Pulse the mixture 2-3 times in a spice grinder or coffee mill for a finer texture.

Notes

Store in an airtight container for up to 1 year.
Use generously on beef, chicken, pork, lamb, or vegetables.
Adjust cayenne/chipotle for more heat; reduce brown sugar for less sweetness.
