Ingredients

  • 2 lbs ground beef
  • 1 medium white onion, chopped
  • 2 (15 oz) cans black beans, drained and rinsed
  • 2 (15 oz) cans red kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 2 (15 oz) cans stewed tomatoes
  • 1 (10 oz) can Rotel diced tomatoes with green chilies
  • 1 (4 oz) can diced green chilies
  • 1 taco seasoning packet
  • 1 ranch dip mix packet
  • 2 cups water

Instructions

  • Brown ground beef in a pan until no longer pink; drain excess grease.
  • Chop onion and add to slow cooker.
  • Combine all ingredients in the slow cooker, ensuring beans are drained and rinsed.
  • Cook on low for 6–7 hours.
  • Adjust seasoning and heat to taste before serving.

Notes

Use lean ground beef to minimize greasiness.
Homemade taco seasoning allows better control over sodium.
Fire-roasted tomatoes add smokier depth.
Serve with toppings like shredded cheese, cilantro, or avocado.
