Ingredients

  • 1 9-inch pre-made refrigerated pie crust
  • 1 large egg, room temperature
  • 1 lb lean ground beef
  • 1/2 cup small yellow onion, diced
  • 1/4 cup small green bell pepper, diced
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup chunky salsa
  • 1 oz packet taco seasoning mix
  • 8 oz block cheddar-jack cheese, shredded

Instructions

  • Preheat oven to 425°F (220°C)
  • Place pie crust in a 9-inch pie dish and crimp edges
  • Beat egg and brush over crust edges (for browning)
  • Cook beef, onion, and bell pepper in a skillet for 6-8 minutes
  • Drain excess fat from skillet
  • Stir in salsa and taco seasoning; cook 3-5 minutes
  • Blend in 1 cup shredded cheddar-jack cheese
  • Pour beef mixture into pie crust
  • Sprinkle remaining cheese over the filling
  • Bake 30 minutes until crust is golden and filling is bubbly
