Ingredients

  • 1 pound ground beef
  • 12 ounces macaroni and cheese (2 boxes of 6 ounces each)
  • 10 ounces diced tomatoes and green chilies (Rotel)
  • 1 ounce taco seasoning
  • 1/4 cup water
  • Optional: shredded cheese, sour cream, chopped cilantro

Instructions

  • Cook macaroni and cheese per package instructions
  • Brown ground beef in a skillet until fully cooked
  • Drain excess fat from the beef
  • Stir taco seasoning and 1/4 cup water into beef; cook 1-2 minutes
  • Add diced tomatoes and chilies to the skillet; heat 2-3 minutes
  • Combine cooked macaroni and cheese with beef mixture
  • Stir well to evenly coat the pasta
  • Serve topped with shredded cheese, sour cream, and/or cilantro

Notes

For halal compliance, use halal-certified ground beef.
Macaroni and cheese sauce can be made with low-fat milk to reduce richness.
Add drained black beans for extra protein and fiber.
