Ingredients

  • 4 cups mashed sweet potatoes (about 3-4 large)
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 cup evaporated milk
  • ½ cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup chopped pecans
  • ¼ cup shredded coconut
  • ¼ teaspoon ground cloves
  • Mini marshmallows (optional, use vegan if needed)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x9-inch baking dish
  • Boil and mash sweet potatoes until smooth
  • In a large bowl, combine mashed potatoes, melted butter, evaporated milk, eggs, and vanilla extract
  • Add brown and granulated sugars, then spices (cinnamon, nutmeg, ginger, cloves) and salt
  • Mix thoroughly until smooth and fragrant
  • Fold in chopped pecans and shredded coconut if using
  • Transfer mixture to the prepared baking dish
  • Bake for 45-55 minutes until golden and set
  • Let cool slightly before serving

Notes

Bake time may vary slightly based on oven performance
Pecans and marshmallows can be substituted with walnuts or omitted entirely
Store leftover pone in an airtight container in the refrigerator for up to 5 days
