Ingredients

  • 3 cups grated raw sweet potatoes
  • ½ cup unsalted butter, melted
  • 1 cup evaporated milk
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup raisins (optional)
  • ½ cup chopped pecans (optional)
  • ¼ cup shredded coconut (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Grate 3 cups of fresh sweet potatoes.
  • Whisk melted butter, evaporated milk, brown sugar, granulated sugar, eggs, and vanilla.
  • Stir in cinnamon, nutmeg, ginger, and salt.
  • Fold in grated sweet potatoes until combined.
  • Add raisins, pecans, or coconut (optional).
  • Pour mixture into prepared dish and bake for 50–60 minutes.
  • Cool slightly before serving with whipped cream or powdered sugar.

Notes

Use fresh sweet potatoes for best moisture and texture.
Leftovers can be refrigerated for up to 3 days.
Add optional mix-ins based on preference.
