Ingredients

  • 4–5 ripe bananas, sliced
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter, melted

Instructions

  • Preheat oven to 175°C (350°F)
  • Lightly grease a baking dish with butter
  • Combine sliced bananas, brown sugar, ¼ cup granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla extract in a bowl
  • Transfer banana mixture to the greased baking dish and spread evenly
  • In another bowl, whisk flour, 1 cup granulated sugar, baking powder, and salt
  • Stir milk into the dry ingredients until a smooth batter forms
  • Pour melted butter evenly over the banana layer
  • Carefully pour the batter over the butter and banana mixture without stirring
  • Bake for 40 minutes until golden brown and bubbly
  • Let cool slightly before serving

Notes

Leftovers taste even better the next day
Use very ripe bananas for maximum sweetness and flavor
Serve with a scoop of vanilla ice cream (optional)
