Ingredients

  • 1 lb chicken breakfast sausage (casings removed)
  • 1 lb processed melting cheese such as Velveeta, cut into 1-inch cubes
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., RoTel), undrained
  • Nonstick cooking spray

Instructions

  • Heat a skillet over medium heat. Add the chicken sausage, breaking it into small pieces. Cook for 7–10 minutes until browned, then drain excess grease.
  • Lightly spray a 2–4 quart slow cooker with nonstick cooking spray.
  • Layer the cubed cheese in the slow cooker, then add the cooked sausage on top. Pour the undrained tomatoes with chilies over the mixture.
  • Cover and cook on LOW for 1.5–2 hours or HIGH for 1 hour. Stir gently every 30 minutes to ensure even melting.
  • Once the dip is bubbly and thick, stir thoroughly and switch to the WARM setting.
  • Serve with tortilla chips, corn chips, or toasted baguette slices.

Notes

For extra flavor, add 1 tbsp chili powder or cumin to the cooked sausage before layering.
Substitute gluten-free cheese if necessary.
Leftovers can be refrigerated for up to 2 days; reheat gently.
