Ingredients

  • 3-4 boneless, skinless chicken breasts (medium-sized)
  • 1½ cups Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • 4 tablespoons melted butter (or olive oil)
  • 1 cup marinara or spaghetti sauce
  • 1½ cups shredded mozzarella cheese
  • Non-stick cooking spray or olive oil spray

Instructions

  • Preheat oven to 450°F (230°C). Lightly coat a baking dish with cooking spray
  • Combine breadcrumbs and Parmesan in a shallow bowl
  • Pat chicken breasts dry with paper towels
  • Brush each chicken breast with melted butter
  • Coat chicken breasts in the breadcrumb mixture, pressing to adhere
  • Arrange coated chicken breasts in the baking dish
  • Spread marinara sauce evenly over chicken
  • Sprinkle shredded mozzarella cheese on top
  • Bake for 30 minutes until chicken is cooked through and golden brown

Notes

Use panko breadcrumbs for extra crunch
Freshly grated Parmesan is preferred for better adhesion and flavor
Whole milk mozzarella melts more evenly
Serve with garlic bread or a green salad
Can be fully prepared ahead and refrigerated until cooking
