Ingredients

  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1 cup pineapple tidbits, drained
  • 2 tablespoons vinegar (white or apple cider)
  • 1 tablespoon brown sugar
  • 2/3 cup mayonnaise
  • Black pepper to taste
  • 2 tablespoons fresh cilantro, chopped

Instructions

  • Reserve pineapple juice when draining the tidbits for the dressing
  • In a large bowl, whisk mayonnaise, vinegar, brown sugar, reserved pineapple juice, and black pepper until smooth
  • Add drained pineapple tidbits and coleslaw mix to the bowl
  • Sprinkle chopped cilantro over the ingredients
  • Toss gently to coat everything evenly
  • Cover and refrigerate for at least 30 minutes
  • Give a final toss before serving chilled

Notes

Use fresh pineapple if available for brighter flavor and natural sweetness
