Ingredients

  • 1.16 lb peaches, peeled and chopped (approximately 3 large peaches or 2 cups chopped)
  • 2 cups water (for syrup)
  • 1/2 cup sugar (or brown sugar, honey, or sugar-free alternatives like erythritol or stevia)
  • 1/3 cup lemon juice (from about 2 lemons)
  • 3 cups water (plain, sparkling, coconut water, or a mix)
  • Lemon slices, for garnish (optional)
  • Peach slices, for garnish (optional)
  • Mint leaves, for garnish (optional)
  • Ice cubes, for serving (optional)

Instructions

  • Combine chopped peaches, 2 cups water, and sugar in a medium saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar.
  • Reduce heat and simmer for 5-10 minutes until peaches soften and release juice.
  • Cool the syrup to room temperature (~30 minutes), then strain through a fine sieve or cheesecloth, pressing to extract liquid. Discard solids or save for later use.
  • Juice 2 lemons to get 1/3 cup lemon juice. Strain if desired.
  • In a pitcher, mix 1 cup peach syrup, lemon juice, and 3 cups water. Taste and adjust sweetness with more syrup if needed.
  • Serve chilled over ice, garnished with lemon and peach slices, or mint.
  • Store leftovers in the refrigerator for up to 3 days.

Notes

Use ripe, juicy peaches for best flavor.
For less sweet versions, halve the sugar quantity or use sugar substitutes.
Sparkling water adds effervescence; coconut water can enhance tropical notes.
Stir and strain syrup thoroughly to remove peach solids.
Adjust syrup-to-water ratio based on your preferred tartness or sweetness.
