Ingredients

  • 2 pounds potatoes, sliced into ½-inch rounds
  • 1 large onion, halved and quartered
  • 4 cloves garlic, chopped
  • 1 tablespoon fresh rosemary, chopped
  • ½ cup canola oil
  • ½ cup olive oil
  • 1 packet onion soup mix
  • 1 tablespoon freshly ground black pepper

Instructions

  • Preheat your oven to 450°F (230°C)
  • Slice potatoes into ½-inch rounds and cut onion into quarters
  • Arrange potatoes and onion in a roasting pan
  • Pour canola oil and olive oil over the vegetables
  • Add garlic, rosemary, onion soup mix, and pepper
  • Toss to coat evenly
  • Cover with foil and roast for 25 minutes
  • Remove foil, stir, and roast 15-30 minutes more until crisp and caramelized

Notes

Use parchment paper for easy cleanup
Stir halfway through uncovered roasting for even browning
For extra flavor, add sea salt or garlic powder before serving
