Ingredients

  • 1 lb boneless skinless chicken thighs or breasts
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup barbecue sauce (smoky or spicy variety)
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 cup mixed vegetables (e.g., peas, carrots, corn)
  • Chopped green onions or parsley (optional)
  • Cooking oil

Instructions

  • Heat skillet over medium heat and coat bottom with oil
  • Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper
  • Sear chicken 5-6 minutes per side until golden brown (not fully cooked)
  • Mix barbecue sauce and honey, then pour over chicken to coat
  • Add uncooked rice to skillet
  • Add chicken broth and mixed vegetables
  • Bring to boil, reduce heat to low, cover, and simmer 20-25 minutes or until liquid is absorbed
  • Garnish with green onions or parsley (optional)

Notes

For extra flavor, use bone-in chicken thighs
Swap vegetable oil for coconut oil if desired
Leftovers store in airtight container for up to 3 days
Can add red bell pepper slices or zucchini for more veggies
