Ingredients

  • 36 vanilla sandwich cookies coarsely crushed
  • 3 oz box strawberry gelatin mix
  • 4 tablespoons unsalted butter melted
  • 5-6 drops red food color gel
  • 16.5 oz box Strawberry Supreme cake mix
  • 3 large eggs room temperature
  • 1/2 cup unsalted butter melted
  • 1 cup whole milk
  • 3 oz box strawberry gelatin mix
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 16 oz cream cheese softened
  • 1/4 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 3 large eggs room temperature
  • 8 oz cream cheese softened
  • 1/2 cup heavy cream
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  • Preheat oven to 350°F. Divide crushed cookies into 2 bowls. Mix one bowl with dry strawberry gelatin. Melt butter and tint half with red food coloring. Pour plain butter over plain crumbs and tinted butter over gelatin crumbs. Spread onto parchment-lined baking sheets and bake 10 minutes. Cool completely.
  • Spray two 9-inch round cake pans. Mix cake mix, eggs, melted butter, milk, and strawberry gelatin on medium speed until smooth. Divide batter between pans and bake 24-28 minutes. Cool completely.
  • Reduce oven to 325°F. Whisk sugar and cornstarch together. Beat cream cheese, heavy cream, and vanilla on medium-high. Add eggs one at a time on low. Slowly add sugar-cornstarch mixture and mix until smooth. Pour into parchment-lined springform pan and bake 40 minutes. Turn off oven and let rest 20 minutes. Cool 30 minutes then freeze 1 hour.
  • Beat cream cheese, heavy cream, and butter for frosting. Add vanilla and powdered sugar gradually until smooth. Layer bottom cake, spread frosting, add cheesecake layer, spread frosting, and add top cake.

Notes

Let cheesecake sit at room temperature 30 minutes before serving. Garnish with fresh strawberries if desired. Store in refrigerator up to 3 days.
