Ingredients

  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (for batter), softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup non-alcoholic sparkling wine or sparkling water with white grape juice
  • ½ cup peach puree (fresh peaches blended)
  • 1 cup unsalted butter (for frosting), softened
  • 4 cups powdered sugar
  • ½ cup peach puree (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Fresh peach slices
  • Sparkling sugar

Instructions

  • Preheat oven to 350°F (175°C). Line muffin pan with liners.
  • Whisk flour, baking powder, and salt in a bowl.
  • Beat butter and sugar until fluffy.
  • Add eggs one at a time, then mix in vanilla.
  • Alternate adding dry ingredients with sparkling wine and peach puree, beginning and ending with dry ingredients.
  • Spoon batter into liners 2/3 full.
  • Bake 18-20 minutes until golden.
  • Cool completely before frosting.
  • Beat frosting butter, peach puree, powdered sugar, and vanilla until smooth.
  • Pipe frosting onto cupcakes and top with peach slices and sparkling sugar.

Notes

Use ripe, fresh peaches for puree.
Sparkling water with white grape juice mimics a Bellini flavor profile without alcohol.
Store in an airtight container at room temperature up to 2 days.
