Ingredients

  • 1 stick unsalted butter, softened (½ cup)
  • 1⅓ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk, room temperature
  • 2-3 tablespoons fresh lemon zest (about 2-3 lemons)
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup granulated sugar (optional, for coating)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking pan with parchment paper
  • Whisk together flour, baking soda, baking powder, and salt in a medium bowl
  • Beat softened butter, granulated sugar, and brown sugar until light and fluffy
  • Mix in egg yolk, lemon zest, and vanilla until well combined
  • Gradually add dry ingredients to wet, mixing just until combined
  • Roll dough into 1½-inch balls; optionally coat in extra granulated sugar
  • Arrange cookies 2 inches apart on baking sheets and bake 9-11 minutes until edges are lightly golden and centers are set
  • Cool on the pans for 1 minute, then transfer to a wire rack

Notes

Use room temperature butter for smooth mixing
