Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 1/2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon non-alcoholic vanilla extract
  • 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 2 cups vegetable oil, for frying
  • 1/2 cup packed light brown sugar, for caramel
  • 3 tablespoons unsalted butter, for caramel
  • 3 tablespoons heavy cream, for caramel
  • 1/4 teaspoon non-alcoholic vanilla extract, for caramel
  • A pinch of salt, for caramel

Instructions

  • Peel, core, and dice the apples into small, uniform pieces
  • Whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl
  • In another bowl, whisk buttermilk, egg, and non-alcoholic vanilla extract until smooth
  • Fold wet ingredients into dry ingredients until just combined; do not overmix. Fold in diced apples
  • Heat vegetable oil in a skillet (350°F/175°C) until it sizzles when a batter droplet is added
  • Using a spoon, drop small portions of batter into hot oil. Fry 3-4 at a time, 2-3 minutes per side until golden
  • Drain fritters on paper towels. In a saucepan, combine brown sugar, butter, cream, vanilla extract, and salt. Cook over medium heat until smooth
  • Pour caramel glaze over warm fritters and let set slightly before serving

Notes

Apples should be finely diced for even frying
Use a thermometer to maintain oil temperature
Let caramel glaze reach 'soft ball stage' (234-240°F/112-116°C) for optimal texture
Store in airtight container at room temperature for up to 3 days
