Ingredients

  • 3 cups cooked shredded chicken
  • 4 cups mashed potatoes
  • 2 cups corn kernels (fresh or frozen, thawed)
  • 2 cups shredded cheddar cheese
  • 2 cups brown gravy (homemade or store-bought)
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Spread 3 cups of cooked shredded chicken evenly across the bottom of the greased baking dish.
  • Layer 4 cups of creamy mashed potatoes over the chicken, spreading gently to form a smooth and even layer.
  • Evenly scatter 2 cups of corn kernels over the mashed potatoes.
  • Pour 2 cups of warm brown gravy over the casserole, allowing it to seep into the layers.
  • Generously sprinkle 2 cups of shredded cheddar cheese evenly on top.
  • In a small bowl, mix 1 cup of panko breadcrumbs with 2 tablespoons of melted butter until the crumbs are well coated.
  • Top the casserole with the buttered panko mixture and place in the oven to bake for 25 to 30 minutes, or until the top is golden and crispy.
  • Remove from the oven, let rest for 5 minutes, then serve.

Notes

Grease the baking dish well to prevent sticking.
If using frozen corn, thaw it before adding to the casserole.
Add additional cheese on top for extra richness, if desired.
