Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 can (about 21 oz) cherry pie filling

Instructions

  • Preheat oven to 350°F (175°C)
  • Line a muffin tin with cupcake liners
  • Combine graham cracker crumbs and melted butter in a bowl
  • Spoon 1 tablespoon of crust mixture into each liner and press firmly to form a base
  • Beat cream cheese, sugar, and vanilla until smooth
  • Add egg and mix just until combined
  • divide the filling among the crusts, filling each 2/3 full
  • Bake for 15-20 minutes until centers set
  • Cool completely at room temperature
  • Spoon cherry pie filling onto each baked bite
