Ingredients

  • 1 lb lean ground beef
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 3 large carrots, sliced into 1-inch pieces
  • ½ onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 cup shredded Colby Jack cheese

Instructions

  • Preheat oven to 400°F (200°C) or prepare grill/campfire for medium-high heat
  • In a bowl, combine baby potatoes, carrots, onion, olive oil, and Italian seasoning
  • Toss well to coat
  • Cut 4 large heavy-duty aluminum foil sheets
  • Divide seasoned vegetables into 4 equal portions on the center of each foil sheet
  • Mix ground beef with garlic powder, onion powder, salt, and pepper
  • Form into 4 equal patties
  • Place each patty on top of the vegetable portions
  • Fold foil to seal tightly
  • Place packets on grill, baking sheet, or campfire grate
  • Cook for 30-45 minutes until beef is fully cooked
  • Open packets carefully to avoid steam
  • Sprinkle with ¼ cup Colby Jack cheese per serving

Notes

Check internal temperature of ground beef for doneness (160°F)
Substitute beef with halal ground lamb/chicken if preferred
Add fresh herbs like rosemary for extra flavor
