Ingredients

  • 1 lb lean ground beef
  • 1/2 head green cabbage, thinly sliced
  • 1 large carrot, cut into thin strips
  • 3 green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp sriracha (adjust to taste)
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  • Prepare the sauce: In a medium bowl, combine soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and sriracha. Stir well and set aside.
  • Make the cornstarch slurry: Whisk cornstarch and water in a small bowl until smooth.
  • Cook the ground beef: Heat a skillet or wok over medium-high heat. Cook beef, stirring frequently, until browned. Drain excess fat.
  • Add vegetables: Toss in cabbage and carrot. Stir-fry 3-4 minutes until slightly tender but crisp.
  • Combine sauce and slurry: Add prepared sauce to the beef and vegetables. Toss to coat.
  • Thicken the sauce: Pour in the cornstarch slurry and cook 1-2 minutes until glossy and thickened.
  • Finish with green onions: Stir in sliced green onions, then serve immediately.

Notes

For a greener version, use zucchini or bell peppers instead of carrots.
Adjust sriracha to control spice level.
Top with sesame seeds or extra chopped green onions before serving.
