Ingredients

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts, cubed
  • ½ cup chopped yellow onion
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 oz packet ranch seasoning
  • 4 cups unsalted chicken stock
  • ½ lb penne pasta
  • 6 oz cream cheese
  • 10.5 oz can cream of chicken soup
  • 8 oz Colby jack cheese, shredded
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon smoked paprika (for halal smoky flavor)

Instructions

  • Heat olive oil in a skillet over medium heat. Add chicken cubes, onions, salt, and pepper. Cook 5-6 minutes until chicken is browned and onions soften.
  • Sprinkle ranch seasoning and paprika into the skillet. Pour in chicken stock and bring to a boil.
  • Add penne pasta to the skillet. Reduce heat, cover, and simmer 15-20 minutes until pasta is tender and liquid is absorbed.
  • Stir in cream cheese and cream of chicken soup until smooth.
  • Mix in 1½ cups Colby jack cheese and 1 tbsp parsley. Sprinkle remaining cheese on top. Cover and let melt for 5 minutes.
  • Garnish with a drizzle of olive oil and extra parsley.

Notes

Substitute 2 tbsp olive oil and ½ tsp smoked paprika for bacon. For smoky flavor. Avoid alcohol-containing ingredients like ranch seasoning if unsure; use a halal-certified alternative.
