Ground Beef and Potato Cheesy Skillet

Ingredients

  • 1 lb ground beef
  • 1 lb baby potatoes, diced
  • 1 tbsp oil (vegetable or olive oil)
  • 1 cup sour cream
  • 1 cup milk
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • Optional: 1 small onion, diced; 1 red bell pepper, diced

Instructions

  • Heat oil in a skillet over medium heat. Cook diced potatoes 12–15 minutes until golden and tender, then remove from skillet.
  • Add ground beef to skillet, cook until browned, and drain excess fat.
  • Add onions and/or peppers (if using) and cook 3–4 minutes until softened.
  • Return potatoes to skillet with beef mixture. Mix well.
  • Stir in cream of mushroom soup, sour cream, milk, paprika, garlic powder, salt, and pepper until creamy.
  • Simmer on low 5–7 minutes. Sprinkle cheddar cheese on top and cover, cooking 2–3 minutes until melted.
  • Garnish with parsley or green onions before serving.

Notes

Use uniform potato pieces for even cooking
Add onions or peppers during beef cooking for extra flavor
Optional: substitute dairy-free milk and sour cream for lactose-free version
