Ingredients

  • 2 lbs chicken tenders, thighs, or breast cut into 3-inch pieces
  • 2 tablespoons olive oil
  • 1 stick (8 tablespoons) butter
  • 8-10 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon hot sauce
  • 2 teaspoons red pepper flakes
  • 1/3 cup fresh parsley, minced
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden skewers (pre-soaked in water for 30+ minutes)

Instructions

  • Soak wooden skewers in water for at least 30 minutes
  • Combine paprika, garlic powder, onion powder, salt, and black pepper in a bowl
  • Cut chicken into 3-inch pieces for even cooking
  • In a bowl or zip-top bag, mix chicken with olive oil and seasoning
  • Thread chicken pieces tightly onto skewers to prevent burning
  • Microwave butter and garlic until partially melted
  • Add red pepper flakes, hot sauce, and parsley to butter mixture
  • Brush garlic parmesan sauce over skewers during last 2 minutes of grilling
  • Grill skewers 4-5 minutes per side or until internal temperature reaches 165°F

Notes

Marinate chicken in refrigerator for at least 2 hours for more flavor
Add bell peppers or onions to skewers for vegetable accompaniment
Use a meat thermometer to ensure chicken is fully cooked
Skewers can be refrigerated for up to 24 hours before cooking
