Ingredients

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 6–8 Fruit Roll-Ups (choose your favorite fruit flavors)
  • 1 cup graham cracker crumbs

Instructions

  • Prepare the cheesecake filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together using a hand mixer or stand mixer. Continue until the mixture is smooth and creamy without lumps.
  • Unroll the Fruit Roll-Ups: Lay the Fruit Roll-Ups flat on a clean, smooth surface such as a cutting board or parchment paper. Make sure they are completely unrolled without any folds or creases.
  • Spread the filling: Using a butter knife or small offset spatula, spread a thin, even layer of the cheesecake mixture over each Fruit Roll-Up, covering them edge to edge without tearing the candy.
  • Add the crunch: Sprinkle graham cracker crumbs evenly over the cheesecake layer on each Fruit Roll-Up, gently pressing crumbs down to adhere to the filling.
  • Roll into logs: Carefully roll each Fruit Roll-Up tightly from one edge to the other to form a log. Make sure the filling stays inside and the roll is compact.
  • Slice into bites: Using a sharp knife, slice each roll into ¼ to ½ inch thick bite-sized pieces. Arrange them on a plate or tray.
  • Chill: Refrigerate the cheesecake bites for at least 30 minutes before serving.
