Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (non-alcoholic)
  • Water as directed on taco seasoning packet
  • 8 oz Mexican blend shredded cheese
  • 10 small flour tortillas
  • Vegetable oil for frying

Instructions

  • Cook the Beef: In a large skillet over medium heat, add ground beef. Brown it while draining excess fat.
  • Add Seasoning: Sprinkle taco seasoning and add water per packet instructions. Simmer until thickened.
  • Prepare Tortillas: Lay tortillas flat and spoon seasoned beef down the center.
  • Add Cheese: Sprinkle generous cheese over the beef.
  • Roll Them Up: Tightly roll each tortilla; tuck edges to seal.
  • Heat Oil: In a skillet, heat 1-inch-deep oil to 350°F (175°C).
  • Fry Roll Ups: Fry batches of roll ups seam-side down until golden (2-3 minutes per side).
  • Drain and Serve: Place on paper towels to drain. Serve warm with sides.

Notes

Don’t overfill to ensure proper frying.
Use a meat thermometer to verify beef doneness (internal temperature of 160°F/71°C).
For cleaner results, use a cooling rack to drain oil after frying.
