Ingredients

  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Pinch of salt
  • Pinch of pepper
  • Fresh basil leaves (optional, for garnish)
  • ½ large red onion, finely chopped
  • 1½ cups cherry tomatoes, quartered
  • 8 oz fresh mozzarella, sliced into bite-sized pieces
  • 1 cucumber, peeled, fork-scored, sliced thinly, then diced

Instructions

  • Prepare the marinade: In a small bowl, combine the olive oil, balsamic vinegar, dried oregano, dried basil, and a pinch of salt and pepper. Whisk thoroughly and set aside.
  • Prep the cucumber: Peel the cucumber, use a fork to score its surface, then dice into small pieces. Transfer to a mixing bowl.
  • Add the tomatoes: Quarter the cherry tomatoes and add to the bowl with the cucumber.
  • Chop the onion: Finely slice and dice the red onion, then add to the bowl.
  • Prepare the mozzarella: Slice the mozzarella into bite-sized pieces and add to the bowl.
  • Combine salad and marinade: Pour the marinade over the salad ingredients and gently toss until coated.
  • Rest and serve: Let sit at room temperature for 10 minutes. Garnish with fresh basil leaves if desired.

Notes

Use fresh mozzarella for creaminess
Add lemon juice for extra brightness if preferred
Store refrigerated for up to 24 hours
Serves best at room temperature
