Ingredients

  • 1 lb Beef Sirloin, thinly sliced
  • 2 tbsp Olive Oil
  • 2 Large Onions, thinly sliced
  • 2 cloves Garlic, minced
  • 1 tsp Thyme (fresh or dried)
  • 1 cup Beef Broth
  • 1 cup Shredded Mozzarella Cheese
  • 8 oz Egg Noodles, cooked
  • Salt and Pepper to taste

Instructions

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear thinly sliced beef sirloin for 3 to 5 minutes until browned but not fully cooked. Remove beef and set aside.
  • Lower heat to medium-low. Add onions, garlic, and thyme to the skillet. Cook for 15 to 20 minutes until onions are golden brown and caramelized.
  • Pour 1 cup of beef broth into the skillet. Deglaze by stirring to loosen browned bits, then simmer for 2 to 3 minutes to reduce slightly.
  • Return seared beef to the skillet. Cook together for 2 to 3 minutes to finish cooking the beef.
  • Add cooked egg noodles to the skillet. Toss gently to coat noodles with the savory sauce.
  • Sprinkle shredded mozzarella cheese evenly over the mixture. Cover loosely with a lid and let cheese melt for 1 to 2 minutes.

Notes

For a cheese-free variation, omit mozzarella or use a dairy-free alternative.
Substitute beef broth with vegetable broth for a lighter version.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
