Ingredients

  • 3 ripe bananas (mashed)
  • 1 cup crushed pineapple (slightly drained)
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • 1 jalapeño (very finely minced)
  • 1/2 teaspoon chili flakes
  • 1 tablespoon hot honey
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  • Mash bananas in a large bowl with some texture remaining
  • Transfer to a saucepan, gently mash further while heating
  • Add pineapple, coconut, brown sugar, granulated sugar, lime juice, zest, and salt; mix thoroughly
  • Stir in jalapeño, chili flakes, hot honey, cayenne, and vanilla until well combined
  • Cook over medium-low heat for 12-18 minutes, stirring frequently until thickened and glossy
  • Cool for 10 minutes, then refrigerate in a jar for at least 1 hour before serving

Notes

Jar and refrigerate for up to 1 week
Pair with croissants, rice cakes, or plantain chips
Adjust spice level by adding more/less jalapeño or chili flakes
