Ingredients

  • 16 ounces rotini pasta
  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 1 pint cherry tomatoes, halved
  • 1/4 cup green onions, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup Catalina dressing
  • 2 cups crushed Nacho Cheese Doritos
  • 1/4 cup fresh cilantro, chopped

Instructions

  • Bring a large pot of salted water to a boil
  • Add the rotini pasta and cook until al dente
  • Drain and rinse thoroughly under cold water
  • Set pasta aside to cool
  • Heat a large skillet over medium-high heat
  • Sauté ground beef until browned and cooked through
  • Stir in taco seasoning to coat the meat
  • Let cool slightly
  • In a large bowl, combine cooled pasta, cherry tomatoes, green onions, cheddar cheese, and Monterey Jack
  • Add cooked taco-seasoned beef and toss gently to mix
  • Stir in Catalina dressing until evenly combined
  • Top with crushed Doritos and fresh cilantro before serving

Notes

Chill for at least 2 hours before serving to let flavors meld
Use ground turkey or chicken as a leaner alternative
Thousand Island dressing works in place of Catalina
Refrigerate up to 24 hours ahead of serving
