Ingredients

  • 1 medium cucumber
  • 2 cups fresh strawberries
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh mint leaves

Instructions

  • Wash the cucumber thoroughly under cold running water
  • Slice the cucumber into thin rounds (1/8-inch thick) and place in a bowl
  • Rinse strawberries, pat dry, hull them, and slice into 1/4-inch thick pieces
  • Combine olive oil, balsamic vinegar, and honey in a small bowl until smooth
  • Sprinkle salt and black pepper into the dressing; whisk well
  • Pour the dressing over the salad and toss gently until the ingredients are evenly coated
  • Add the fresh mint leaves and mix to combine
  • Serve chilled for optimal refreshment

Notes

Use ripe but firm strawberries for the best texture
For extra crunch, add toasted nuts or seeds at serving time
