Crockpot Cowboy Soup

Ingredients

ground beef
1
large onion, diced
2
cloves
garlic, minced
2
cups
diced potatoes

can
(15 oz) kidney beans, drained and rinsed

can
(15 oz) pinto beans, drained and rinsed
1
can
(15 oz) diced tomatoes
1
can
(15 oz) corn, drained
1
can
(10 oz) diced tomatoes with green chilies

beef broth
1
packet ranch seasoning mix
1
packet taco seasoning mix
1
tsp
smoked paprika
1
tbsp
Worcestershire sauce
Salt and pepper, to taste
Instructions
Brown the ground beef in a skillet until fully cooked.
Sauté onion and garlic with beef for 3–4 minutes.
Drain excess fat from beef mixture.
Add ingredients to crockpot: beef, onions, garlic, potatoes, beans, diced tomatoes, corn, tomatoes with green chilies, broth, seasonings, paprika, and Worcestershire sauce.
Stir well and cook on Low for 6–8 hours or High for 3–4 hours.
Adjust salt, pepper, and seasoning to taste before serving.
Notes
For spiciness, add cayenne pepper.
Use low-sodium beans and broth to reduce salt.
Serve with tortilla chips or tortillas.
