Crockpot Cowboy Soup

Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced potatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 packet ranch seasoning mix
  • 1 packet taco seasoning mix
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  • Brown the ground beef in a skillet until fully cooked.
  • Sauté onion and garlic with beef for 3–4 minutes.
  • Drain excess fat from beef mixture.
  • Add ingredients to crockpot: beef, onions, garlic, potatoes, beans, diced tomatoes, corn, tomatoes with green chilies, broth, seasonings, paprika, and Worcestershire sauce.
  • Stir well and cook on Low for 6–8 hours or High for 3–4 hours.
  • Adjust salt, pepper, and seasoning to taste before serving.

Notes

For spiciness, add cayenne pepper.
Use low-sodium beans and broth to reduce salt.
Serve with tortilla chips or tortillas.
