Ingredients

  • 6 cups diced potatoes, peeled or unpeeled
  • 1 medium onion, finely chopped
  • 1 cup diced non-pork meat (e.g., smoked turkey)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 package (8 oz) cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled non-pork bacon substitute (e.g., plant-based slices)
  • 1/2 cup chopped green onions
  • Salt and pepper, to taste

Instructions

  • Dice the potatoes, onions, and non-pork meat into small pieces.
  • Combine in the Crock Pot with chicken broth, cream of chicken soup, and cream cheese.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • 30 minutes before serving, add shredded cheddar cheese and crumbled non-pork bacon substitute, stirring until melted.
  • Garnish with green onions before serving.

Notes

For a vegetarian option, substitute non-pork meat with mushrooms or extra cheese
