Ingredients

  • 1 lb ground beef (lean)
  • 1 packet ranch seasoning mix (1 oz)
  • 1 cup shredded cheddar/Mexican blend cheese
  • 10-12 small (6-inch) flour tortillas
  • Vegetable or canola oil for frying

Instructions

  • Cook the beef: In a skillet over medium heat, cook ground beef, breaking apart with a spoon until browned and no pink remains. Drain excess fat.
  • Season the beef: Sprinkle ranch seasoning, stir well to coat, and remove from heat.
  • Add cheese: While warm, mix shredded cheese into the beef until fully melted.
  • Assemble taquitos: Lay a tortilla flat, spoon 2-3 tbsp filling along one edge, roll tightly with sides folded in, and place seam-side down.
  • Fry taquitos: Heat oil in a skillet, carefully place taquitos in warm oil, and fry seam-side down until golden and crispy (2-3 minutes per side).

Notes

Use a light coating of oil to prevent sticking during frying.
For extra crispiness, fry in batches without overcrowding the pan.
Prefer baked taquitos? Brush with oil and bake at 400°F for 10-12 minutes per side.
