Ingredients

  • 1 lb Chicken breasts (chopped)
  • 8 oz Cream cheese (softened)
  • 1/2 cup Sour cream
  • 10 oz Frozen spinach (thawed and wrung out)
  • 14 oz Canned artichoke hearts (chopped)
  • 1 cup Mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
  • 1 tsp Garlic powder
  • 1/2 tsp Salt

Instructions

  • Preheat oven to 375°F (190°C)
  • Grease a medium-sized baking dish with cooking spray or oil
  • Lay the chopped chicken pieces flat across the bottom of the baking dish ensuring even coverage
  • In a medium bowl, combine cream cheese, sour cream, thawed spinach, chopped artichoke hearts, mozzarella, Parmesan, garlic powder, and salt. Mix until smooth
  • Spread the spinach dip mixture evenly over the chicken
  • Bake for 35 minutes or until golden and bubbly
  • Let the casserole rest for 10 minutes before slicing and serving
