Ingredients

  • Smoked sausage (turkey or beef), sliced into ½-inch rounds - 1 lb
  • Baby potatoes (red or Yukon Gold), halved - 1.5 lbs
  • Shredded cheddar cheese - 2 cups
  • Ranch seasoning mix (salt-free preferred) - 1 packet (1 oz)
  • Sour cream - 1 cup
  • Chicken broth (low-sodium optional) - ½ cup
  • Salt and black pepper - To taste
  • Oil or cooking spray - As needed

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Slice sausage into ½-inch thick rounds. Halve baby potatoes for even cooking.
  • In a bowl, mix ranch seasoning, sour cream, chicken broth, and salt/pepper to taste.
  • Layer potatoes and sausage in the dish. Sprinkle with half the cheese.
  • Pour the ranch mixture over the top. Cover with remaining cheese.
  • Bake covered for 30 minutes. Remove cover and bake 15 more minutes until golden.
  • Let rest 5-10 minutes before serving.

Use Greek yogurt instead of sour cream for lighter version
