Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 teaspoons minced garlic
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4.5 oz diced green chile peppers
  • 16 oz refried beans
  • 8 oz tomato sauce
  • 10 oz enchilada sauce
  • 15 oz chili without beans (Hormel brand recommended)
  • 6 large flour tortillas (about 12 inches each)
  • 2 cups shredded lettuce
  • 3 cups shredded Mexican blend cheese
  • Chopped green onions (for garnish)
  • Additional toppings: diced tomatoes, sour cream, dried chives

Instructions

  • Preheat the oven to 400°F
  • Cook the ground beef and onion in a skillet until browned; drain excess grease
  • Add garlic, cumin, salt, and pepper; mix in green chiles and refried beans
  • In a saucepan, combine tomato sauce, chili, and enchilada sauce until warmed
  • Place 1/6 of the beef mixture on each tortilla, sprinkle cheese, fold, and secure with toothpicks
  • Place burritos seam-side down in a baking dish, cover with remaining sauce and additional cheese
  • Bake for 20-25 minutes until bubbly and golden; garnish with green onions and toppings

Notes

Ensure Hormel chili is pork-free; substitute with a beef or vegetarian version if needed
Use flour tortillas for a halal-compliant option
