Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 4 large potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley, for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish
  • Combine ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper in a bowl
  • Shape the mixture into a loaf and place it in the center of the baking dish
  • Arrange potato slices around the meatloaf in overlapping layers
  • Season potatoes with additional salt and pepper
  • Cover the dish with foil and bake for 45 minutes
  • Remove foil, sprinkle cheddar cheese over the meatloaf and potatoes, and bake uncovered for 15 minutes
  • Let cool slightly before slicing and serving

Notes

Optional: Use a non-alcoholic Worcestershire sauce if avoiding alcohol
Potato slices should be thin for even baking
Let the casserole rest for 5 minutes before serving for cleaner slices
